This classic recipe is great served hot or cold at weddings or large catered for parties.
Cooking time 30 mins.
Preparation time: 10 mins.
Ingredients:
500g macaroni, 100ml milk, 150g plain flour, 500g cheddar cheese, salt and pepper, 100g red Leicester cheese.
Method
Put macaroni in a pan and cover with water and proceed to boil. In another pan add the milk, when it starts to boil add the flour and continue to stir until you have a smooth paste like texture with no lumps, once you have this consistency add the grated cheddar and mix until it melts into the sauce. By this time the macaroni should be soft enough, drain it and add all the macaroni to the sauce and mix add salt and pepper to your prefered taste. Get a baking dish and put the contents in sprinkle the grated red Leicester over the top and put in the oven for 15 mins at 180c or gas mark 7. When the cheese has melted take out and serve.
