Egg fried rice

Cooking time: 20 mins.

Ingredients

  • 1 cup of rice
  • 2 eggs
  • 2 tbl spoons soy sauce
  • salt and pepper
  • 2 spring onions
  • 2 tbl spoons cooking oil

Method:

Put the cup of rice in a saucepan, you will need to wash the rice in cold water so fill the pan and move the rice around with your hand, then drain the water.
Now add 2 cups of water and cover the pan with the lid, put on the hob at a high heat. Once the water starts to boil turn the heat down to the lowest heat and leave until all the water has evaporated.
Once evaporated turn of heat and leave.
Now beat 2 eggs in a bowl.
Put your wok on and add 2 tbl spoons of cooking oil, let the oil heat up then add your eggs, beat them as you want a kind of scrambled egg effect.
Once this is achieved add the rice and mix in the egg.
Chop the spring onions into 1 inch long pieces and add to wok, now add the soy sauce and mix in season to your taste with salt and pepper stir and toss then serve.

Egg fired rice is great for chinese catering, don’t forget to serve with chop sticks and soy sause for authentic taste
