Italian Potato Salad

This salad is great for bbq and outdoor summer catering. Its can be made in bulk the night before and is the perfect combination for self service catering events

Preparation Time: 20mins

Cooking Time: 30 mins

Ingredients

450g of new potatoes

4 x Table spoons of natural yoguart

4 x Table spoons of mayonnaise

8 x Sun Dried Tomatoes

2 x Table spoons of flat green parsley finely chopped

Method

  1. Rinse and clean the potatoes
  2. Place potatoes into a large pan of water and bring to the boil
  3. Cook for 10 mins until soft and tender
  4. Cut the sun dried tomatoes into small pieces
  5. For the dressing mix the yogurt and mayonnaise in a large bowl
  6. Add salt and Pepper
  7. Add the sun dried tomatoes
  8. Add the flat leaf parsley
  9. Drain potatoes and leave to cool
  10. Cut the potatoes in half
  11. Pour over the dressing
  12. Leave salad to chill for 20 min and serve
