Rice, anchovy and vegetable salad

  • 2 Oz tomatoes, skinned, deseeded and diced
  • 2 Oz red and green pimentos, diced
  • 2 Oz French beans, cooked and diced
  • 4Oz cooked rice
  • 1 clove garlic, chopped and crushed
  • 4 anchovy fillets, diced
  • vinaigrette

Makes 4 portions Mix all ingredients together and correct seasoning.
