Since summer is upon use the bbq season is most definitely here. Getting hot wings done to perfection so that they are still spicy thereafter can be tricky so here are a few tips on getting you wing sizzling on the bbq for all occasions whether it’s a private bbq or a catering job for 40 guests.
- Always start with a sweet base for your wings, having just spicy wings will often put people coming back for more
- Base you wing two nights before with honey, this will give them plenty of time for the wings to get that sweetness
- When marinating your wings, place a maximum of 5 wings into a freezer bag, allowing them plenty of room to move around
- Poke holes into each of the wings to allow all the marinated to get deep inside the wings.
- Use scotch bonnet peppers to allow for that perfect spice, you should use at least 2 scotch bonnets for every 5 wings.
- Chop and mix tomato ketchup into the wings to create a sweet sauce
- Leave the wings in honey for at least 24 hours and marinate with the scotch bonnet
- If you are catering for a large group pre cook the wings for 30 in the oven at 150 degrees

Never throw the sauce away use this as your basting, each time you turn the wings as a new coat of sauce to keep that spice
